Ageing Bunches harvested manually and submitted to selection at the vineyard and winery. After destemming, the grapes were subjected to steeping, followed by fermentation in stainless steel tanks at a controlled temperature. Malolactic fermentation took place in new French oak barrels followed by aging for 10 months. Only the best barrels formed part of the final batch which aged in the bottle for 15 months until attaining the desired harmony.
Consumption A versatile wine which a very good accompaniment to stews, game, wellcondimented red meats and cured cheese.
Colour Garnet.
Aroma The wine proves to have an intense garnet colour, revealing aromatic notes of wild fruit, spices, toast and smoked meats.
Flavour As a whole it is smooth on the palate with excellent acidity, tannins which are consistent but very velvety and elegant and a long, irreverent and very challenging after taste.
