Ageing After fermentation, the wine goes through an incask "batonnage" process for a few weeks, then is aged until the end of winter. The wine is removed from the casks for bottling at the onset of spring.
Ideal Temperature 12ºC
Consumption This wine should be drunk immediately, or if you prefer, you can let it age for 2 to 3 years. Good accompaniment to baked or boiled fish, particularly cod dishes.
Colour Wine which is crystalline in appearance, defined straw colour.
Aroma Intense aroma where the fruit and wood blend with great complexity.
Flavour In the mouth it is structured, smooth and slightly acidic, lending it great balance. The aftertaste is harmonious and prolonged and fruit and wood are prominent.
